Honey Roasted Cashews

Snack

Ingredients

1 tablespoon honey

1 tablespoon vegetable oil

1 tablespoon water

2 cups cashews, unsalted

2 tablespoons bulk sugar substitute 1 teaspoon salt, or less to taste

Directions

1. Preheat oven to 325 degrees and line a baking sheet with parchment paper.
2. In a large bowl, combine honey, vegetable oil, and water. Add cashews and toss well to coat.
3. Spread the coated nuts in a single layer over the parchment papered baking sheet and bake for 12-15 minutes, stirring once halfway through.
4. Remove pan from oven and sprinkle cashews with sugar substitute and salt while still hot, shaking pan to evenly coat. I suggest starting with only 1⁄2 teaspoon of the salt and adding additional to taste.

Notes

George’s Tips | Watch the baking cashews carefully, as you want them nice and golden brown but the honey can burn! (They’ll still taste good if slightly burned and may even taste better, depending on your taste of course!)
Variation | Though it may sound strange, try adding 1⁄2 teaspoon of ground cayenne pepper for a sweet and spicy snack.
